Patient Food and Nutritional Services (PFANS) Kitchens are responsible for Patient meal service in Mott and University Hospital. The department has achieved Gold status. The department recently renovated the ware wash area in UH B2 kitchen and installed new equipment including a dishwasher and slow speed grinder, which replaced older, less energy efficient equipment. PFANS collaborates with maintenance to perform PMs on equipment, which helps with energy efficiency of equipment. Staff were provided a hot/cold water bottle for Healthcare Foodservice Week and encouraged to use these instead of styrofoam cups. The department transitioned to Canvas instead of printing paperwork in a binder. This saved 16-32 reams of paper per year. A waste recording process was implemented to record waste and reduce food production accordingly. The department purchases food items in bulk rather than individual packets. Efforts continue to switch from styrofoam to compostable where possible. PFANS is investigating and engaging staff in post-consumer composting, which will be very unique for a hospital setting.
